A combo of Pulled Pork and Sloppy Joes.

I love Pulled Pork Sandwiches and Sloppy Joes so I decided to combine them. This recipe is great for using leftover Pulled Pork. My husband does an excellent job of smoking Pork, so I often have him make extra for some of my other recipes including Pulled Pork Chili.

You can also find Pulled Pork or Pulled Rotisserie Pork at most Deli’s. You could also get a pound or two next time you go to your favorite BBQ joint. Most usually sell in bulk for take home. Then pop it in your freezer until you are ready to use it.

PORKY JOES

Ingredients:

  • 1 Pound Ground Pork
  • 1 Pound Smoked Pulled Pork
  • 1 Cup Green Pepper, diced
  • 2 Jalapeno, diced
  • 1 Cup Yellow Onion, diced
  • 1 Bottle BBQ Sauce
  • 2 Tablespoons Concentrated Tomato Paste
  • 1 Tablespoon Caribbean Jerk Seasoning
  • 1/2 Tablespoon Olive Oil
  • 10 Hamburger Buns

Directions:

1. In a large saute pan, add the Green Pepper, Onion, Jalapeno and Olive Oil. Saute the veggies until tender, then transfer them to a bowl or plate and set aside.

2. In the same pan, crumble and brown the Ground Pork.

3. When the Ground Pork is no longer pink, drain off the fat, then add the Veggies back into the pan along with the Smoked Pulled Pork, BBQ Sauce, Tomato Paste and the Caribbean Jerk Seasoning. Fold everything together, ensuring everything is coated.

4. Cook and stir over medium/low heat for 20-25 minutes. You want the flavors to marry and everything to be nice and hot.

5. Serve this on Hamburger Buns. You should get 10 or more servings. It all depends on how much filling you want on your bun. My husband likes his open face style. Store any leftovers in a covered container in the refrigerator.  You can freeze any leftovers as well.
