Lemon Tiramisu

A creamy Lemon Dessert.

This is a no bake, easy to make Dessert. I decided to use Lemon Rimming Sugar in this recipe. It adds extra Lemon flavor and adds a beautiful yellow color to the filling. You can easily find it at any liquor store, most grocery stores or you can order it online.

LEMON TIRAMISU

Ingredients:

  • 1 (8 oz.) Cream Cheese, softened
  • 1/2 Cup Mascarpone Cheese
  • 1/2 Cup Lemon Rim Sugar, plus 2 teaspoons for garnish.
  • 2 Teaspoons Lemon Extract
  • 1 (12 oz.) Frozen Lemonade Concentrate, thawed
  • 1(14 oz.) package Lady Fingers (Biscotti Savoiardi), I use Alessi brand
  • Note: You won’t use all the Lady Fingers in the package but I recommend purchasing this size because you may have one or two Lady Fingers that are damaged in the package or if you over dip one of them in the Lemonade, you can just start with a fresh Lady Finger.

Directions:

1. Pour the thawed Lemonade concentrate into a shallow dish. Set aside.

2. Using a handheld mixer, blend together the Cream Cheese, Mascarpone Cheese and the Lemon Extract until smooth.

3. Add 1/2 Cup of the Lemon Rim Sugar to the Cream Cheese Mixture and mix well until it is fully combined.

4. You will need an 8 inch square dish/pan. You will also need 28 of the Lady Fingers. The Lady Fingers need to be in straight rows. I had to trim 14 of my Lady Fingers, removing about 1/2 inch off of one end of 14 of them to ensure they fit perfectly in the pan. Now dip 14 Lady Fingers (7 whole and 7 trimmed) one at a time into the reserved Lemonade, quickly coating all sides and lay them flat side down, evenly in two rows in the pan.

5. Spread half of the Lemon Cream Cheese mixture evenly over the top of the Lady Fingers. Repeat the dipping process with the remaining Lady Fingers and place them evenly on top of the first layer. Spread the remaining Lemon Cream Cheese mixture evenly over the top layer of Lady Fingers.

6. Cover the pan tightly with plastic wrap or foil, don’t let it touch the top layer or it will stick and come right off when you remove it. Place the covered pan in the refrigerator for at least 4 hours or even over night.

7. When ready to serve, sprinkle the remaining 2 teaspoons of Lemon Rim Sugar evenly over the top of the Tiramisu. Slice and enjoy! Store any leftovers covered in the refrigerator.
