Creamy Pasta with a little Cajun zing.

I love Cajun Chicken Pasta. This is so easy to make and it is full of flavor.

For this dish the Pasta and the Chicken are the stars of the show so no need for a lot of extra ingredients. A nice creamy Cajun sauce to coat everything and you have a fabulous meal.

LOW CARB CAJUN CHICKEN PASTA

Ingredients:

  • 3 Boneless Skinless Chicken Breasts
  • 1 (8 oz.) Package Penne Pasta
  • 3 Tablespoons Cajun Seasoning
  • 1/2 Cup Red Onion, diced
  • 2 Cloves Garlic, minced
  • 1 (14.5 oz.) Can Diced Tomatoes, with juice
  • 1 & 1/2 Cups Heavy Whipping Cream
  • 1 Cup Parmesan Cheese, shredded
  • 2 Tablespoons Extra Virgin Olive Oil
  • Freshly Ground Black Pepper

Directions:

1. Cut the Chicken into bite size cubes (about 3/4 inch). Transfer them into a bowl or container. Sprinkle the Olive Oil over the Chicken and stir to coat the Chicken. Then sprinkle 2 Tablespoons of the Cajun Seasoning over the Chicken. Stir well to ensure all the Chicken is coated with the Cajun Seasoning. Cover the dish and refrigerate for 2-3 hours to flavor the Chicken.

2. After 2 or 3 hours remove the Chicken from the Refrigerator. Let it stand for 20 minutes.

3. In a large skillet add the Coated Chicken and cook over medium/low heat. When the Chicken is done, transfer it to a platter and set aside.

4. Start cooking the Pasta according to package directions for al dente Pasta.

5. While the Pasta is cooking, add the Onion and Garlic into the same skillet that you cooked the Chicken in. Cook and stir until tender.

6. Pour the Tomatoes with Juice over the Onions and Garlic. Whisk in the Heavy Cream, the remaining 1 Tablespoon Cajun Seasoning and the Parmesan Cheese. Give your Pepper Mill a few good turns over the Sauce in the pan and continue to stir and cook over medium/low heat until the Sauce starts to thicken.

7. When the Pasta is done, drain it and add it to the Skillet. Add the Chicken back into the skillet and fold everything together ensuring everything is coated with the Sauce. Continue to cook and stir until everything is thoroughly heated thru.

Serve this Pasta with extra Parmesan Cheese and a nice warm baguette.
