Kani Salad

An easy flavorful Salad.

Kani Salad is so easy to make. It is light and refreshing. Perfect for an appetizer, light lunch or side dish. This is my version of this popular Salad.

KANI SALAD

Ingredients:

  • 2 (8 oz.) pkgs. Imitation Crab Legs
  • 1 Small English Cucumber, seeded and diced
  • 1 (15 oz.) can Diced Mangos, drained
  • 1 Cup Matchstick Carrots
  • 2 or 3 Green Onion Stalks, diced
  • Juice from 1/2 Lemon
  • 1/3 Cup Kewpie Mayonnaise
  • 1 Tablespoon Siracha
  • 2 Tablespoons Soy Sauce
  • Black Sesame Seeds for Garnish

Directions:

1. In a small mixing bowl, whisk together the Mayo, Lemon Juice, Siracha and Soy Sauce. Set aside.

2. Imitation Crab Legs are a lot like string cheese. They are formed with a paste of surimi white fish. You can separate the Crab Legs by pulling the strands just like you do string cheese. Do this with all the Imitation Crab Legs for the Salad and place the strands in a large bowl.

3. Add the Carrots, Cucumber, Mango and Green Onion into the bowl with the Crab Strands.

4. Pour the Mayo mixture in the same bowl and fold everything together gently, ensuring everything gets coated with the dressing.

5. Cover and refrigerate the Kani Salad until ready to serve.

6. Just before serving, lightly toss the salad once again and then lightly sprinkle the top with Black Sesame Seeds to garnish.
