Italian Sub Salad

The flavors of an Italian Sub Sandwich in a Salad.

I just love a good Italian Sub Sandwich. I thought, why not put all those flavors into a Salad? This Salad is great to serve as an entree or a side. You can also make this Salad for a buffet.

My recipe makes enough Salad for 4 main Entrees or 6 side salads. If you want to make a large bowl, to add to your buffet table, double just the Salad ingredients. You should have plenty of the Dressing, because my recipe makes about 2/3 Cup Dressing and you will only need 1/3 cup for the original recipe..

ITALIAN SUB SALAD

Salad Ingredients:

  • 4 Cups Romaine Lettuce, chopped
  • 5 Ounces Salami Slices, cut into bite size pieces (you can also substitute Garlic Summer Sausage)
  • 3/4 Cup Grape Tomatoes, quartered
  • 3/4 Cup Sliced Pepperoncini, cut into bite size pieces
  • 1/2 Cup Red Onion, diced
  • 1 Cup Shredded Italian Cheese Blend
  • 1 (2.25 oz.) Can Sliced Black Olives, drained

Italian Salad Dressing Ingredients:

  • 1/3 Cup Extra Light Tasting Olive Oil
  • 1/4 Cup Red Wine Vinegar
  • 1 Teaspoon Honey
  • 1 Teaspoon Dijon Mustard
  • 1 Teaspoon Italian Seasoning
  • 1 Teaspoon Freshly Ground Black Pepper

Directions:

1. In a glass jar with a tight fitting lid, add the Olive Oil, Red Wine Vinegar, Dijon Mustard, Honey, Italian Seasoning and Pepper. Seal the lid tightly and shake vigorously. Set aside. (this recipe makes about 2/3 cup-you will only need 1/3 cup for this recipe)

2. In a large bowl, add the Romaine, Black Olives, Salami, Red Onion, Pepperoncini, Black Olives and the Cheese.

3. Shake the Jar once again, then drizzle half of the Dressing over the Salad. Gently toss everything together and ensure everything gets coated with the Dressing. Serve this Salad with a good Italian bread such as focaccia and maybe a glass of vino. Cover and store the remaining Dressing in your refrigerator for up to two weeks in the jar with the lid on, just shake the jar vigorously with the lid on before using.
