Carne Asada in Tortillas

Flavorful grilled Flank Steak with Onions, Peppers with an incredible Dressing, wrapped up in a warm Tortilla. 

This dish takes a bit of prep work but it is all worth it. Tender Beef with Caramelized Onions and Peppers then topped off with a Jalapeno Lime Dressing.

I marinate the Flank Steak for this recipe, the night prior. Then about mid morning I slice the Peppers and Onions and refrigerate them in a covered container. Next I make the Jalapeno Lime Dressing and put it in a mason jar and refrigerate it until dinner time, so the flavors can marry.

CARNE ASADA IN TORTILLAS

Ingredients:

  • 1 Two Pound Flank Steak, marinated (see marinade recipe below)
  • 8 Soft Flour Tortillas (7 or 8 inch size)
  • 1 & 1/2 Cups Jalapeno Lime Dressing (see recipe below)
  • 4 Large Peppers, use Orange, Red and Yellow, cut into strips
  • 2  Large Yellow Onions, sliced
  • 1 Tablespoon Olive Oil
  • Cilantro for Garnish

Marinade Ingredients:

  • 1/4 Cup Freshly Squeezed Lime Juice
  • 1 Clove Garlic, minced
  • 1/2 Cup Orange Juice
  • 1/4 Cup Avocado Oil
  • 2 Tablespoons White Vinegar
  • 1/4 Cup Cilantro Leaves, loosely packed
  • 2 Teaspoons Freshly Ground Black Pepper

Jalapeno Lime Dressing Ingredients:

  • 1/2 Cup Mayo
  • 1/2 Cup Sour Cream
  • 1 Clove Garlic
  • 1 Cup Cilantro Leaves, loosely packed
  • 1 Lime, Juice and Zest
  • 2 Jalapenos, ribs and seeds removed

Directions:

1. The night prior, make the Marinade. Place all the Marinade ingredients into a blender and blend until well combined. Place the Flank Steak in a sealable plastic bag and pour the Marinade over the Steak. Seal the bag and place the bag on a tray, then place the tray in the refrigerator overnight. I flip the bag over every so often to ensure the marinade is reaching all parts of the Steak.

2. The next morning I make the Jalapeno Lime Dressing. Place all of the Dressing ingredients into a blender and blend until well combined and smooth. Transfer the Dressing into a glass jar with a lid and refrigerate until ready to use. Making the Dressing ahead of time allows the flavors to marry.

3. When ready to start preparing the Carne Asada, preheat your oven to 300 degrees. Next preheat a gas grill on high heat.

4. In a large skillet, saute the Peppers and Onions in the Olive Oil, over medium heat, for about 10 minutes. The Peppers and Onions should be tender and a little caramelized. When the Peppers and Onions are done, set the pan aside. Cover the pan to keep the Peppers and Onions warm.

5. Stack and wrap the Tortillas in foil and place them in the preheated oven for 10-15 minutes.

6. Remove the Jalapeno Lime Dressing from the refrigerator, and set aside.

7. Remove the Steak from the Marinade and discard the Marinade. Grill the Steak over high heat on the preheated grill, for about 4-5 minutes per side, you want the Steak to be medium rare. Remove the Steak from the Grill and let it rest prior to slicing.

8. Remove the Tortillas from the oven. Slice the Flank Steak in slices diagonally, going against the grain. Set up a station to assemble the Tortillas. Start with a warm Tortilla, layer in a few strips of Beef, then layer in Onions and Peppers. Now drizzle about 1 Tablespoon of the Jalapeno Lime Dressing over all, inside the Tortilla. Garnish with a few Cilantro Leaves on top. Serve with a few Lime wedges if you wish.
