Banana Bread with Raisins

A classic Banana Bread with Golden Raisins.

I love Banana Bread for breakfast or brunch. I spread a little sweet cream butter on mine and pair it with a cup of English tea.

The mistake a lot of people make with Banana Bread is overmixing, not cooking the Bread long enough or not using ripe enough Bananas. If you keep those three things in check, your Bread should turn out perfectly!

BANANA BREAD WITH RAISINS

Ingredients:

  • 2-3 Very Ripe Bananas, mashed (about 1 & 1/2 cups)
  • 1 Cup Golden Raisins
  • 2 Eggs
  • 1/3 Cup Orange Juice
  • 1/2 Cup Coconut Oil
  • 1 & 3/4 Cups Flour
  • 1/2 Teaspoon Baking Powder
  • 1 Teaspoon Baking Soda
  • 1/2 Teaspoon Ground Ginger
  • 1/2 Teaspoon Nutmeg
  • 1/2 Teaspoon Salt
  • 1/2 Tablespoon Cinnamon
  • 1/4 Teaspoon Ground Cloves
  • 1/2 Cup Sugar

Directions:

1. Preheat your oven to 350 degrees.

2. Spray a 9.25 x 5.25 Loaf Pan with non stick baking spray and set aside.

3. In a medium bowl, using a fork, stir together the Flour, Salt, Cinnamon, Nutmeg, Ground Cloves, Ground Ginger, Baking Powder, and Baking Soda. Set aside.

4. In a large mixing bowl, add the Mashed Bananas, Orange Juice, Coconut Oil, Eggs and the Sugar. Mix on medium speed with a hand mixer until combined. Slowly add in the Flour mixture about 1 cup at a time, scraping the sides of the bowl. Continue to mix until just until everything is incorporated. Try not to overmix the Batter.

5. Stir the Golden Raisins into the Batter.

6. Pour the Banana Bread Batter into the prepared loaf pan. Place the pan in the preheated oven. Bake the Banana Bread for 45-60 minutes. All ovens cook differently so check the Banana Bread at the 30 minute mark. Insert a wooden skewer in the center of the Banana Bread close to the bottom, if it comes out clean, the Bread is done. I use a skewer rather than a toothpick so you can tell if the lower half of the Bread is completely done. The Bread should be a nice brown color. It is important to cook the Banana Bread long enough, other wise you will have gooey Bread or Batter that is not done near the bottom. My Bread took 50 minutes in my oven.

7. Once you determine the Bread is done, remove the pan from the oven and allow it to cool completely in the pan. Remove the cooled Banana Bread from the pan and slice to serve.

8. Store any leftover Banana Bread in a sealed container or wrapped tightly in foil.
