Cinnamon Pineapple Pie

Use fresh Pineapple to create this delicious Pie.

This Pie tastes similar to Apple Pie but the tender Pineapple really gives this Pie an extraordinary flavor.

Cinnamon compliments Pineapple so well it is only fitting to make a Pie with these two ingredients.

I like to serve this Pie with freshly whipped cream or a vanilla bean ice cream. It is simply delicious and it won’t last long!

CINNAMON PINEAPPLE PIE

Ingredients:

  • 5 Cups Fresh Pineapple, cut into 3/4 inch cubes
  • 2 Tablespoons plus 1 Teaspoon Ground Cinnamon
  • Pie Crust for a 9″- Two Crust Pie (homemade or store bought)
  • 1/8 Teaspoon Ground Nutmeg
  • 1/8 teaspoon Ground Cloves
  • 1 & 1/2 Tablespoons Cold Unsalted Butter
  • 1/2 Cup Sugar

Directions:

1. Preheat oven to 375 degrees.

2.  In a small bowl or ramekin, stir together the Nutmeg, Cloves and Two Tablespoons of Cinnamon. Set aside.

3. Place the Pineapple in a large mixing bowl. Sprinkle the Sugar and the Cinnamon mixture over the Pineapple and stir gently. Next sprinkle the Tapioca over the Pineapple and fold everything together. I use Tapioca in the Pie filling instead of flour, as my thickening agent. Let the Pineapple sit for 15 minutes.

4. Prepare your Pie Crust for a Two crust Pie, roll out half the dough and line a 9 inch pie plate with the pastry. Roll out the remaining dough to create the top Crust for the Pie.

5. After 15 minutes, give the Pineapple filling a good stir, ensuring all the Pineapple is coated and transfer it to the Pastry lined pie plate. Dot the Butter on top of the Pineapple as you see here.

6. Take the second Pie Crust Pastry and place it on top of the Pie. Flute the edges to seal. Using a small paring knife, cut 6 small slits in the top of the Pie Crust to vent the Pie, then sprinkle 1 Teaspoon of Cinnamon evenly over the top of the pie Crust.

7. Bake the Pie for 45-60 minutes. Look for the Crust to be brown and the filling to be slightly bubbly. If the Crust is golden brown but the Pie is not done yet, cover the Crust with a pie shield or aluminum foil.

8. When the Pie is done, remove it from the oven and allow it to cool prior to serving.

Store any leftovers covered in the refrigerator.
