Cauliflower with a kick.

With just a few ingredients, you can take your Cauliflower side dish up a notch. Roasting the Cauliflower first, then adding your favorite Buffalo Sauce gives the Cauliflower so much flavor.

When the Cauliflower is done, serve it with Blue Cheese or Ranch Dressing to drizzle on top. It is delicious!

LOW CARB BUFFALO CAULIFLOWER

Ingredients:

  • 1 Head Cauliflower, cut into bite size florets
  • 1 Tablespoon Avocado Oil
  • 2-3 Tablespoons Louisiana Chicken Wing Seasoning
  • 3 Tablespoons Unsalted Butter
  • 1/2 Cup Buffalo Wing Sauce

Directions:

1. Preheat the oven to 425 degrees.

2. Transfer the Cauliflower to a rimmed baking sheet pan. Drizzle the Avocado Oil over the Cauliflower. Sprinkle the Chicken Wing Seasoning over the Cauliflower. Stir the Cauliflower ensuring all is coated with Oil and Seasoning.

3. Roast the Cauliflower for 10 minutes in the preheated oven, then give it a good stir and pop it back in the oven. Roast for another 10-15 minutes. You want the Cauliflower to be tender and have a slight char. In other words well done.

4. While the Cauliflower is roasting add the Butter and Buffalo Wing Sauce into a small saucepan. Cook and stir over low heat until the Butter is melted and the Sauce is warm.

5. When the Cauliflower is done, transfer the Cauliflower to a large metal or heat proof bowl. Pour the Buffalo Sauce mixture over the Cauliflower and fold until all the Cauliflower is coated with the Buffalo Sauce.

6. Transfer the coated Cauliflower back onto the baking sheet pan and pop the pan back in the oven. Continue to roast for about 5 minutes. You want the Buffalo Sauce to be sticky and adhering nicely to the Cauliflower.  After 5 minutes stir the Cauliflower and roast for another 3-4 minutes.

Serve this Buffalo Cauliflower with Blue Cheese or Ranch Dressing to drizzle on top.
