Mini Chocolate Chip Cookies

A favorite Chocolate Chip Cookie recipe.

These little gems are easy to make with the help of a box cake mix. They are buttery and moist.

I suggest you make two batches because they are so delicious they won’t last long!

MINI CHOCOLATE CHIP COOKIES

Ingredients:

  • 1 Stick Unsalted Butter, softened
  • 1 Egg
  • 1 Teaspoon Vanilla Extract
  • 2 Tablespoons Half & Half
  • 1 Cup Mini Semi Sweet Chocolate Chips
  • 1 (15.25 oz.)Yellow Cake Mix ( I recommend Pillsbury Premium brand)

Directions:

1. Preheat oven to 350 degrees.

2. In a large mixing bowl, add the Butter, Egg, Dry Cake Mix, Vanilla and the Half & Half. Mix all the ingredients together using a hand held mixer until well combined.

3. Stir in the Chocolate Chips.

4. Gather about 1 Tablespoon of the Cookie Dough and roll it into a ball. Place the Cookie ball onto an ungreased cookie sheet. Continue making Cookie Dough balls, placing them 2 inches apart on the ungreased cookie sheet pan. I prefer to bake one sheet pan of Cookies at a time, but you can fill two and bake them at the same time. Just keep a close eye on both pans as they may cook unevenly.

5. Bake the Cookies for 13 minutes, or until the bottom is golden brown. After 13 minutes, remove the pan from the oven and let the Cookies rest for 1 minute, then transfer the Cookies to a cookie cooling rack.

6. This recipe makes about 35-40 Cookies. Store the cooled Cookies in a covered container to maintain freshness.
