Mexican Beef Stew

A hearty Beef Stew full of delicious Mexican inspired flavors.

This is definitely a Stew to feed a crowd. I serve it with Cornbread and Chips and Salsa. It is great for Game Day, especially if it is chilly outside. This Stew will warm your guests and fill them with all these great Mexican inspired flavors.

MEXICAN BEEF STEW

Ingredients:

  • 2 1/2 Pounds Beef Stew Meat or Sirloin Steak, cubed
  • 4 (10 oz.) Cans Diced Tomatoes w/Green Chilies
  • 1 (15 oz.) Can Black Beans, drained
  • 2 (1.25 oz.) Packets Taco Seasoning
  • 1 (12 oz.) Bottle plus 1 Cup Corona Beer
  • 1 Cup Yellow Onion, diced
  • 2 Cups Jalapenos, sliced
  • 1 (12 oz.) Package Frozen Roasted Corn
  • 1 Cup Cilantro, roughly chopped, loosely packed
  • Juice and Zest from 1 Lime
  • 1 (16 oz.) Jar Chunky Salsa
  • 1 (28 oz.) Frozen Diced Hash Brown Potatoes
  • 1 Cup Beef Broth
  • 3-4 Tablespoons Tomato Paste, if needed

Directions:

1. Place Beef, 1 Bottle Corona Beer and 1 Packet of Taco Seasoning in a resealable plastic bag and marinate overnight in the refrigerator. I usually place the bag in a bowl or pan in case there are any leaks.

2. Saute the sliced Jalapenos in a medium size fry pan with 1/2 tablespoon Olive Oil just until tender. Transfer them to a 6 or 8 quart slow cooker.

3. Saute the Onions in the same pan, just until tender, then transfer them to the slow cooker.

4. Drain the Marinated Beef then transfer it into the slow cooker. Add the Beans, 3 Cans of the Tomatoes w/Chilies, Corn, Lime juice and Zest, Salsa and Cilantro into the slow cooker.

 5. In a medium bowl whisk together 1 packet Taco Seasoning, 1 Cup Corona Beer and 1 Cup Beef Broth. Pour the mixture into the slow cooker.

6. Cook on low for 5-6 Hours. Stir in the frozen Diced Hash Brown Potatoes the last hour and increase the temp to High. The Taco Seasoning has Corn Masa in it, which should thicken your Stew. If your Stew is too thick, stir in the remaining can of Tomatoes. Alternatively, if the Stew isn’t as thick as you would like, you can add 3-4 Tablespoons Tomato Paste at this point. The Stew is ready when all ingredients are piping hot.

Garnish the Stew with a little extra Cilantro and Lime Wedges.
