Homemade Salsa with garden fresh Tomatoes.

Salsa is so easy to make. This is a chunky version using fresh Tomatoes from the garden. Right about midsummer, Tomatoes are abundant if you grow your own. This is a great recipe to showcase the Tomatoes with the addition of Jalapeno, Onion and Cilantro. The Lime just gives a little touch of citrus to bring the Salsa together nicely.

I like to serve this with a variety of chips and of course ice cold cerveza!

GARDEN TOMATO SALSA

Ingredients:

  • 3 Cups Garden Tomatoes, diced
  • 2 Jalapenos, diced
  • 2/3 Cup Fresh Cilantro, rough chop
  • 2/3 Cup Red Onion, diced
  • 1 Clove Garlic, minced
  • 1 Lime, zest and juice

Directions:
1. First dice up the Tomatoes. I used about 3 large Tomatoes from my garden to yield 3 Cups diced. Place them in a bowl.

2. Add the diced Jalapenos, Red Onion, Garlic and Cilantro to the bowl with the Tomatoes. Fold all the ingredients together.

4. Zest the Lime over the Salsa and then squeeze the Lime directly over the Salsa to release the Lime juice. Give everything another good stir.

5. Now cover the Salsa and refrigerate for at least 2 hours. This will allow the flavors to marry.

6. Give the Salsa a good stir prior to serving. Serve with your favorite style chips or make your own!

7. Store the Salsa tightly covered in the refrigerator. It will last several days.
