Fresh Strawberry Coffee Cake

A moist Coffee Cake with Fresh Strawberries.

Who doesn’t love a good old fashioned Coffee Cake? With the addition of fresh Strawberries, this Cake is super moist and delicious without being overly sweet. Although this one I made from scratch, it is easy to prepare and it has a nice presentation. Serve it with your favorite coffee blend for dessert or even at brunch.

FRESH STRAWBERRY COFFEE CAKE

Cake Ingredients:

  • 1 & 1/2 Cups Fresh Strawberries, halved then sliced
  • 1/2 Cup Strawberry Preserves
  • 1 & 1/2 Cups Blended Strawberry Yogurt
  • 3 Teaspoons Almond Extract
  • 1 & 1/2 Cups Granulated Sugar
  • 1/2 Cup Unsalted Butter, melted
  • 3 Eggs
  • 2 & 1/4 Cups Flour
  • 2 Teaspoons Baking Powder
  • 1/2 Teaspoon Himalayan Pink Salt
  • 1/4 Cup Crushed Almonds

Glaze Ingredients:

  • 1/4 Cup Unsalted Butter, melted
  • 1 Cup Powdered Sugar
  • 1 Teaspoon Almond Extract
  • 2-3 Tablespoons Heavy Whipping Cream

Directions:

1. Preheat oven to 350 degrees. Spray a 9 x 13 pan with nonstick Baking Spray, set aside.

2. In a medium bowl stir together the Flour, Salt and Baking Powder. Set aside.

3. In a small saucepan, melt 1/2 Cup of the Butter. Set aside to cool slightly.

4. In a large mixing bowl add the Yogurt, the granulated Sugar, 3 Teaspoons of the Almond Extract, the melted Butter and stir well with a wooden spoon.

5. Stir in the Eggs one at a time.

6. Now add 1 Cup of the Flour mixture to the Yogurt mixture, stirring well. Continue adding the Flour mixture 1 cup at a time and stirring well until all ingredients are combined as you see here.

7. Now transfer the Batter into the prepared pan and spread it evenly in the pan.

8. Place dollops of the Strawberry Preserves randomly on top of the batter.

9. Now sprinkle the Fresh Strawberries on top of the Batter and Preserves.

10. Bake the Coffee Cake in the preheated oven for 35-40 minutes. All ovens bake differently so check the Cake at the 25 minute mark. When a toothpick inserted in the center comes out clean, the Coffee Cake is done. In my oven, my Cake took 38 minutes to bake.

11. Allow the Coffee Cake to cool completely prior to making the Glaze.

12. Once the Coffee Cake is cooled, we can make the Glaze. First melt the 1/4 Cup Butter in a small saucepan then set aside to cool slightly.

13. In a medium size bowl, add the melted Butter, 1 Teaspoon Almond Extract and stir well with a fork.

14. Now slowly stir in the Powdered Sugar. Add 2-3 Tablespoons of the Heavy Whipping Cream to get a Glaze consistency. In other words, we don’t want it to be thick like frosting but we don’t want it to be too runny, just a nice consistency to spread evenly on top of our Cake.

15. Now evenly spread the Glaze on top of the Cake.

16. Finally, sprinkle the Almonds on top of the Coffee Cake.

17. You are ready to serve! Store leftovers in the refrigerator.
