Creme De Menthe Cookies

Melt in your mouth Chocolate Mint Cookies.

While the lovely green color lends itself to serving these Cookies on Christmas or St Patty’s Day, you can make them anytime, especially if you are a Chocolate Mint lover!

CREME DE MENTHE COOKIES

Ingredients:

  • 1 (10 oz.) Package Andes Creme De Menthe Baking Chips
  • 1 Teaspoon Mint Extract
  • 2 & 1/4 cups Flour
  • 1 & 1/2 Cups Sugar
  • 1/2 Teaspoon Baking Soda
  • 1/4 Teaspoon Salt
  • 2 Large Eggs
  • 2 Sticks Unsalted Butter
  • 15 Drops Green Food Coloring

Directions:

1. Preheat oven to 300 Degrees.

2. In a medium bowl stir together the Flour, Salt and Baking Soda. Set aside.

3. In a large bowl mix the Butter and Sugar using a hand mixer on medium, until creamy.

4. Add the Mint Extract and the Green Food Coloring to the Butter mixture and mix until well combined.

5. Beat inĀ  the Eggs one at a time.

6. Gradually add the Flour mixture into the bowl and mix on low speed or stir with a wooden spoon until the Flour is well combined. You may also just use your hands to combine the last portion of Flour into the Dough.

7. Stir the Mint Baking Chips into the Dough.

8. Roll the Dough into 1 inch balls and place them on an ungreased baking sheet at least 2 inches apart.

9. Bake the Cookies for 15-18 minutes or until slightly golden brown on edges. When Cookies are done, let the Cookies rest on the cookie sheet for 1 minute then transfer them to a cookie cooling rack. Store Cookies in an airtight container.

My Recipe makes 3 dozen Cookies.
