Creamy Sweet Potatoes with Roasted Garlic.

Instead of making standard mashed Potatoes, why not try mashing Sweet Potatoes then kicking it up a notch with Roasted Garlic? I also add a few other components to make this dish creamy and rich.

Roasting Garlic gives the Garlic a sweet caramelized texture. When incorporated into this dish, it brings out the earthiness of the Sweet Potatoes.

CREAMY MASHED SWEET POTATOES WITH ROASTED GARLIC

Ingredients:

  • 4-6 Large Sweet Potatoes, about 8 cups diced
  • 2 Garlic Bulbs, roasted
  • 1 Stick Butter
  • 1 (4 oz.) Package Cream Cheese
  • 1 Cup Sour Cream
  • Freshly Ground Pepper
  • Dash of Salt

Directions:

1. Roast the Garlic and set aside.

2. Wash and peel 4 large Sweet Potatoes. Cut into chunks. Try to keep them all the same size so they cook evenly.

3. In a large pot, bring about 4 quarts of Water and a dash of Salt, to a boil. Then add in the Sweet Potatoes and return to a boil. Reduce the heat to medium and continue to cook just until fork tender.

4. Drain the Potatoes and return them to the pot.

5. Add the Butter, Sour Cream and Cream Cheese to the Potatoes and mash well with a potato masher.

6. Give the old Pepper Mill a few turns over the Potatoes, add a pinch of Salt, and Squeeze the Roasted Garlic from the bulbs into the Potatoes. Continue to mash them until everything is incorporated.

7. Once you have a nice Mashed Potato consistency you are ready to serve.
