Chocolate Caramel Cracker Bars

Easy to make Bars that are big on flavor.

I have a couple recipes that I use crackers in the crust, but I think this is one of my favorites. So easy to make and so delicious. You can have most of these ingredients on hand in your pantry and when you need a quick Dessert, this one comes together in no time.

CHOCOLATE CARAMEL CRACKER BARS

Ingredients:

  • 4 Cups finely crushed Ritz Crackers
  • 24 Caramels, unwrapped
  • 1 (14 oz.) Can Sweetened Condensed Milk
  • 3 Tablespoons Heavy Whipping Cream
  • 1/4 Cup Salted Peanuts, crushed
  • 1 Cup Mini Semi Sweet Chocolate Chips

Directions:

1. Preheat oven to 350 degrees.

2. Line an 8 x 8 baking pan with aluminium foil, allowing the foil to hang over the edge slightly.

3. In a large bowl, stir together the Cracker Crumbs and the Sweetened Condensed Milk.

4. Press the Cracker mixture evenly into the bottom of the foil lined pan. Use the back of a spatula to firmly press them down.

5. Bake the Cracker Crust for 10 minutes.

6. While the Crust is baking, add the Caramels and Heavy Whipping Cream into a medium size microwave safe bowl and heat for 1-2 minutes, stirring until Caramels are completely melted and the Caramel sauce comes together.

7. After 10 minutes, remove the Crust from the oven and pour the warm Caramel sauce evenly over the Crust layer.

8. Quickly sprinkle the Chocolate Chips over the Caramel layer and as they begin to melt, spread them out evenly with a frosting spatula.

9. Sprinkle the Crushed Peanuts evenly over the Chocolate layer.

10. Cover the pan of Bars with foil and place in the refrigerator for about 1-2 hours allowing the layers to harden.

11. Use the foil to remove Bars from pan. Peel away the foil from the Bars and discard. Cut into 2 x 3 or 2 x 2 inch bars.
