Authentic Style Jamaican Jerk Sauce

An authentic style Jamaican Jerk Sauce.

My husband and I just love Jamaican Jerk Sauce, especially on grilled wings. We had been purchasing a store brand Sauce that we liked but it was discontinued. I purchased countless bottles of Sauce but could never find one we were impressed with. Most were full of high fructose corn syrup. Then my husband said I should just try creating a recipe and make my own. So, I did just that! I researched what some of the main ingredients are typically used in authentic Jamaican Jerk sauces and I also had habaneros growing in my garden, so I got to work creating a recipe. After a few attempts and tweaks my recipe was a big hit! It is great on grilled chicken wings, pork tenderloin or shrimp.

For my recipe I list 2 or 4 Habanero Peppers. For a tamer version of the Sauce, use 2, for a real kick, use 4. Your choice…but you can always start with 2, give it a taste, then add 2 more if you like the heat. Also if you prefer a thicker Sauce, add the optional 1/4 teaspoon of Xanthan Gum. Depending on what you are going to put the Jerk Sauce on, sometimes you may want the Sauce a bit thicker.

AUTHENTIC JAMAICAN JERK SAUCE

Ingredients:

  • 2 or 4 Habanero Peppers (use 2,or for increased heat use 4), diced
  • 2 Tablespoons Chinese 5 Spice Powder
  • 2 Tablespoons Thyme
  • 2/3 Cup Dark Brown Sugar, packed
  • 1 Cup White Onion, diced
  • 1/2 Cup Green Onion, diced
  • 3 Garlic Cloves, minced
  • 1 Cup White Wine Vinegar
  • 1 Cup Orange Juice
  • 1/2 Cup Soy Sauce
  • 1/2 Cup Olive Oil
  • 1/4 teaspoon Xanthan Gum (optional)

Directions:

1. Place all of the above ingredients into a blender.

2. Cover the blender, then pulse until the ingredients start to come together. Blend on high for about 2 minutes. As you can see the consistency is more authentic than your average store bought Jerk Sauce. It will be fantastic on wings, pork or shrimp.

3. Pour the Sauce into one or two glass jars with tight fitting lids.

You can use the Jerk Sauce right away or store it in the refrigerator. I think it gets better after the flavors marry, so I let it sit for a few hours in the refrigerator before using. You will need to shake the jars vigorously before using because the Oil will separate.

Here is what it looks like on Grilled Chicken Wings. Simply delicious!
