Spicy Guinness Chili

If you like spicy Chili you will love this recipe.

What goes better with Chili than Beer! So for this recipe I marinated the Beef Steak in Guinness for flavor and tenderness and then of course I added Guinness into the Chili itself.

I make this recipe in a slow cooker. In fact most of my Chili recipes I prefer to make in a slow cooker. I think low and slow is the best way to marry the flavors in Chili and since the cooking time is several hours, the slow cooker provides you ease in cooking so you don’t have to monitor a flame on your stove. I use a 6 or 7 quart slow cooker for this recipe. I live in Minnesota and my slow cookers do get used a lot during the colder months.

SPICY GUINNESS CHILI

Ingredients:

  • 2 (11.2 oz.) Bottles Guinness Beer
  • 2 Pounds Sirloin Steak, cut into bite size pieces
  • 2 Pounds Ground Beef
  • 1 (28 oz.) Can Diced Tomatoes, with juice
  • 1 (29 oz.) Can Tomato Puree
  • 1 (7 oz.) Can Chipotle Chilies in Adobo Sauce, diced
  • 1 Cup Diced Jalapenos
  • 1 Cup Diced Red Pepper
  • 1 Cup Diced Yellow Onion
  • 3 Garlic Cloves, minced
  • 1 (15 oz.) Can Black Beans, drained and rinsed
  • 1 (16 oz.) Can Dark Red Kidney Beans, drained and rinsed
  • 2 Tablespoons Hot Chili Powder
  • 2 Teaspoons Olive Oil
  • 1/4 Cup Tomato Paste, if needed

Directions:

1. Place the Sirloin Steak into a resealable plastic bag and pour 1 Bottle of Guinness Beer in the bag. Seal tightly and marinate for 6-8 hours or overnight. I suggest putting the bag in a bowl or on a tray before placing in the refrigerator in case the bag leaks.

2. After the Steak has marinated, you can begin assembling the Chili. Add the Tomatoes with juice, Tomato Puree, Beans, Chipotle Chilies with sauce and 1 Bottle of Guinness Beer into a 6 or 7 quart slow cooker crock.

3. Place the Jalapeno, Red Pepper, Onion and Garlic in a large skillet. Add 2 teaspoons of Olive Oil to the pan and saute the vegetables just until tender. Transfer the vegetables into the slow cooker crock.

4. Drain then marinated Steak then place the Steak in the skillet that you used to saute the vegetables. Brown the Steak quickly over medium/high heat. Browning the meat brings out more flavor. Then transfer the Steak to the slow cooker crock.

5. Brown the Ground Beef in the same skillet, drain, then transfer to the slow cooker crock as well.

6. Add the Hot Chili Powder to the Chili ingredients in the slow cooker and stir well. If you don’t have Hot Chili Powder you can use regular Chili Powder. Most markets do carry the Hot version though.

7. If your Chili doesn’t look thick enough, you can add the Tomato Paste at this point. I did not need to add the Tomato Paste but if your Tomatoes had more juice than you were expecting, the Tomato Paste will keep your Chili nice and thick.

8. Cook the Chili in the slow cooker for 6-8 hours covered on low, stirring occasionally. You want the Chili to be nice and thick and all the flavors to marry. So make sure to taste the Chili as well.

You can serve this Chili with the usual condiments such as Sour Cream, Diced Green Onion and Shredded Cheese. Of course don’t forget to serve this Chili with Guinness Beer!
