A perfect side for Ham or Pork.

This Dressing pairs so well with Ham but it also goes well with grilled Pork Chops or BBQ Ribs. Just a few ingredients and it is so easy to make. Make sure to drain the Crushed Pineapple really well for this recipe. The first time I made this it was a hit and one of our guests had seconds and he doesn’t even like Pineapple! I would double the recipe if you are serving this for the holidays.

PINEAPPLE DRESSING

Ingredients:

  • 1 (20 oz.) Can Crushed Pineapple, drained
  • 5 Slices Hawaiian Bread, cubed (I used Sara Lee Artesano)
  • 4 Large Eggs
  • 1/2 Cup Unsalted Butter, softened
  • 1 Cup Sugar

Directions:

1. Drain the Pineapple first, using a fine mesh strainer. It is important not to have too much of the juice in this dish or it can get mushy. I usually let the Pineapple drain for about 20 minutes to let most of the juice release.

2. Preheat oven to 350 degrees.

3. Spray a 1.5 or 2 Quart casserole dish with nonstick cooking spray and set aside.

4. In a large mixing bowl, cream together the Butter and Sugar with a handheld mixer until fluffy.

5. Add the Eggs one at a time, mixing on med/high speed until fully incorporated.

6.  Fold in the Pineapple using a spatula and be sure to scrape the sides and bottom of the bowl.

7. Gently fold in the Bread.

8. Transfer the Dressing into the prepared pan.

9. Bake the Pineapple Dressing uncovered for 45 minutes. The Dressing will be slightly bubbly and the top will be golden brown when done.
