One Skillet Chicken Penne

This Pasta is full of flavor and easy to prepare.

Nothing better than Dinner made in just one skillet. Okay, to be honest you do need an extra pot to boil the Pasta in but, it all comes together so easily in one skillet with tons of flavor.

I like to serve this with a nice crusty garlic bread, a light green salad and a vintage red wine.

ONE SKILLET CHICKEN PENNE

Ingredients:

  • 1 Pound Boneless Skinless Chicken Breasts, cut into bite size pieces
  • 1 (16 oz.) Penne Rigate
  • 1 (3.8 oz.) Can Sliced Black Olives, drained
  • 2 (14.5 oz.) Cans Basil Garlic Oregano Diced Tomatoes
  • 2 Cloves Garlic, minced
  • 1/2 Cup Plus one Tablespoon Extra Virgin Olive Oil
  • 1/2 Cup Shredded 6 Cheese Italian Blend Cheese or Shredded Parmesan
  • 1 & 1/2 Tablespoons Italian Seasoning
  • 1/4 Cup Fresh Basil Leaves, chiffonade
  • Freshly Ground Black Pepper

Directions:
1. Sprinkle the Italian Seasoning over the Chicken Pieces, then give your Pepper Mill a few turns over the Chicken Pieces. Stir the Chicken together so all the meat is coated with the seasoning. Frankly, I like to use my hands for this step. Set the Chicken aside.

2. Start boiling the water for your Pasta and cook according to package directions for al dente Pasta.

3. In a large non-stick skillet, add 1 Tablespoon Olive Oil the Garlic and the Chicken into the pan. Cook the Chicken & Garlic over medium/low heat, cooking until the Chicken is no longer pink inside. When the Chicken is done, remove the Chicken and Garlic from the pan and set aside.

4. Add the 2 Cans of Tomatoes to the skillet and cook on high with the lid on for about 2 minutes.

5. Reduce heat to simmer and then add the Chicken and Garlic, Basil and the Black Olives into the skillet. Give everything a good stir.

6. The Pasta should be ready at this time. Drain the Pasta and add it to the Skillet. Stir to coat all the Pasta with the Sauce.

7. Add 1/2 Cup Olive Oil to the skillet and stir well. Continue to cook on low for about 3-5 minutes or until everything is heated through.

8. Lastly, give your Pepper Mill a few good turns over the Pasta then stir in the 1/2 Cup Cheese Blend. Serve immediately. You can bring the skillet right to the table or serve in individual Pasta bowls.
