Mini Chocolate Peppermint Loaves

Giftable, delicious Mini Chocolate Peppermint Loaves.

For this recipe I purchase the mini loaf pans that come with dome lids. The domes protect the Frosting and garnish on top. Plus it looks nice for gift giving. I like to add a bow and a mini candy cane on top with a gift tag. Great for giving to neighbors or coworkers.

My recipe is easy to make with the help of a box cake mix. This Cake is moist and more reminiscent of a pound cake. Peppermint and Chocolate go together so well, it makes these Mini Loaves perfect for the Holiday season.

MINI CHOCOLATE PEPPERMINT LOAVES

Ingredients:

  • 1 box (15.25 oz.) Devils Food Cake Mix
  • 1 box (3.9 oz.) Instant Chocolate Fudge Pudding Mix
  • 1/2 Cup Coconut Oil
  • 4 Eggs
  • 3/4 Cup + 3 or 4 Tablespoons Milk
  • 1 Cup Sour Cream
  • 2 Teaspoons + 1 & 1/2 Teaspoons Pure Peppermint Extract
  • 3 Cups Powdered Sugar
  • 1/3 Cup Unsalted Butter, softened
  • 1/8 – 1/4 Cup Mini Semi Sweet Chocolate Chips
  • 1/4 – 1/2 Cup Crushed Candy Canes

Directions:

1. Preheat oven to 350 degrees.

2. Spray Four Mini Baking pans (6.1 x 3.75 x 2.0) with non stick baking spray, set aside

3. In a large mixing bowl, stir together the dry Cake Mix and Pudding Mix.

4. Add 3/4 Cup Milk, Sour Cream, Eggs, Oil and 2 Teaspoons Peppermint Extract to the bowl with the dry mixes and stir well with a wooden spoon until everything is incorporated. The Batter will be thick.

5.Transfer and evenly divide the Batter into the four Mini Baking Pans. They should be about 3/4 full.

6. Bake the Mini Loaves for 35-45 minutes. They will rise nicely and when a toothpick inserted in center comes out clean, the Loaves are done. Allow them to cool completely.

7. In a large mixing bowl, mix the Butter and 1 & 1/2 teaspoons Peppermint Extract with a hand mixer on medium/low speed until the Butter is slightly fluffy. Add in the Powdered Sugar and 3 Tablespoons of the Milk. Mix on low speed, scraping the sides until the Frosting starts to come together. You can add another Tablespoon of Milk if the Frosting needs more moistening. It should be smooth and creamy.

8. Frost the tops of the Mini Loaves using a frosting spatula. Immediately sprinkle the crushed Candy Canes and Mini Chocolate Chips so they adhere to the Frosting.

9. Cover the Frosted Mini Loaves with the dome lids and you are ready for gift giving.
