Mango Macadamia Dessert Cake

A moist, flavorful Dessert Cake.

This Cake is indeed very moist. The Glaze seeps into the Cake creating a rich moist base for the delicious Mango. Lightly salted Macadamia Nuts, really top this Cake off right!

This Cake is fantastic on its own, but it is equally as good with a scoop of vanilla bean ice cream or freshly whipped cream on the side!

MANGO MACADAMIA DESSERT CAKE

Cake Ingredients:

  • 1 (15 oz.) Can Diced Mango, with juice
  • 2 Cups Flour
  • 2 Teaspoons Baking Soda
  • 1/2 Teaspoon Pink Himalayan Salt
  • 1/2 Cup Unflavored Coconut Oil
  • 2 Eggs
  • 1 Cup Sugar

Glaze Ingredients:

  • 1/2 Cup Evaporated Milk
  • 3/4 Cup Sugar
  • 1/4 Cup Unsalted Butter
  • 1/2 Teaspoon Vanilla
  • 1/3 Cup Lightly Salted Macadamia Nuts, slightly crushed

Directions:

1. Preheat oven to 350 degrees. Spray a 13 x 9 cake pan with non stick baking spray, set aside.

2. In a medium size bowl, stir together the Flour, Salt and Baking Soda. Set aside.

3. In a large mixing bowl, whisk together the Eggs, Coconut Oil and Sugar. Slowly add in the Flour mixture and stir well to create the Batter. Fold in the Mango with Juice until well combined.

4. Transfer the Batter into the prepared pan. Bake the Cake for 25-30 minutes. Check the Cake at the 25 minute mark. The Cake should be golden brown and when a toothpick inserted in the center comes out clean, the Cake is done. Add more baking time if needed, to ensure the Cake is set in the center.

5. When the Cake is done, remove the pan from the oven and allow the Cake to cool.

 

6. In a medium saucepan, add the Butter and Evaporated Milk. Cook over low heat until the Butter is melted. Whisk in the Sugar and increase the heat to medium and cook and stir until the mixture comes to a boil. Boil for 3-4 minutes while constantly whisking. Remove the pan from the heat and whisk in the Vanilla. Allow the Glaze to cool for 5-10 minutes, then whisk the Glaze again, and pour the Glaze evenly over the entire top of the Cake. The Glaze will slightly soak into the Cake and Glaze the top of the Cake. Sprinkle the Macadamia Nuts evenly on top of the Cake.

7. Allow the Glaze to set up for about 10 minutes prior to serving. Store any leftovers covered, in the refrigerator.
