Malibu Pineapple Bites

A refreshing Appetizer for Adults.

I just love Fresh Pineapple, especially in the summer months. This is an easy Appetizer recipe that I usually make in the morning, because you do need to let the Pineapple marinate for about 5-6 hours prior to serving. Once it is ready, about mid afternoon or just before dinner, take this treat out on your patio and enjoy! Remember this is only for adults because it does contain alcohol. By the way, the leftover marinade is great to use in a tropical beverage.

MALIBU PINEAPPLE BITES

Ingredients:

  • 1 Fresh Pineapple
  • 1 Cup Malibu Rum
  • 1 Tablespoon Honey
  • 1 Tablespoon Tajin

Directions:

1. Peel and remove core from the Pineapple. Next cut the Pineapple into chunks.

2. Select a vessel for the Pineapple. Preferably glass or ceramic. If you have one of those extra, extra large mason jars, you know the kind that the huge pickles come in, that works great. I used a deep ceramic bowl with a lid. Pour the Malibu in your vessel. Next whisk in the Honey and Tajin.

3. Add the Pineapple to the Marinade and fold the Pineapple in the Marinade, ensuring all the Pineapple Chunks get coated. Cover the vessel you are using and place the Pineapple in the refrigerator.

4. Refrigerate the Pineapple for at least 5-6 hours. Stir the Pineapple every 2 hours to ensure all the Pineapple has been soaking in the Marinade. If you are using a big jar, you can just carefully flip the jar to disperse the Marinade.

5. After 5-6 hours remove the Pineapple Bites from the refrigerator and give them one last stir and you are ready to serve. Save any leftover marinade to use in an adult beverage recipe.
