Who doesn’t love a good Po Boy Sandwich?

For my Lobster Po Boy Sandwiches I use Lobster Tails. The Petite Lobster Tails are often on sale, especially around a Holiday. I purchase them at that time and pop them in my freezer. Never cook the Lobster Tails from frozen because they will be tough when cooked. Just thaw them overnight in your refrigerator then you can follow this recipe the next day. I found this wonderful Spice that really works well in this recipe. It is called Pirates Spice Blend. If you can’t find it at your local market, it is available online.

Don’t forget to serve Hot Sauce on the side. It is a perfect condiment for this Sandwich.

LOBSTER PO BOY

Ingredients:

  • 6 (4 oz.) Petite Lobster Tails
  • 1/4 Cup Celery, diced
  • 1/4 Cup Green Onion, diced
  • Juice from 1/2 of a Lemon
  • 1/2 Cup Mayonnaise
  • 1/2 Teaspoon Himalayan Pink Salt
  • 1 Teaspoon Pirates Bite Spice Blend
  • 4 Hot Dog Buns

Directions:

1. Fill a large pot with salted Water. Bring the Water to a boil. Transfer the Lobster Tails into the boiling Water and boil for 4 minutes. While the Lobster is cooking, fill a large bowl with cold Water and Ice. After the Lobster Tails have cooked for 4 minutes, immediately transfer the Lobster Tails into the Ice Water to stop the cooking process.

2. Once the Lobster Tails have cooled, remove them from the Ice Water. Remove the Shells from the Tails. Cut the meat into chunks. You should yield 2 Cups of Lobster meat. Set aside.

3. Add the Mayonnaise, Salt, Lemon Juice and Pirates Bite Spice Blend into a medium size bowl. Whisk to combine.

4. Add the Celery, Green Onion and Lobster Meat into the same bowl. Fold everything together ensuring the Dressing coats everything.

5. Butter the interior of the Hot Dog Buns and lightly toast them in a toaster oven.

6. Spread 1/4th of the Lobster mixture inside of each Hot Dog Bun. Serve Hot Sauce on the side. I like the Cry Baby Craig’s Hot Sauce.
