Lemon Cream Wonton Mini Desserts

An elegant Mini Dessert full of creamy Lemon flavor.

Wonton Wrappers are usually used in savory dishes but they also make an excellent vessel for sweet temptations as well.

LEMON CREAM WONTON MINI DESSERTS

Ingredients:

  • 24 Wonton Wrappers
  • 8 Ounce Cream Cheese, softened
  • 1 Cup Powdered Sugar
  • 1 box (3.4 oz.) Instant Lemon Pudding
  • 1 & 1/2  Milk
  • 1 Cup Heavy Whipping cream
  • 2 Tablespoons Sugar
  • 1/4 Cup Pecan Pieces

Directions:
1. Place a medium size glass mixing bowl and beaters into the freezer for 10 minutes.

2. Add the Whipping Cream and 2 Tablespoons Sugar into the chilled bowl and mix well using a hand mixer until stiff peaks form. Cover and refrigerate until ready to use.

3. Preheat oven to 350 degrees.

4. Lightly spray two 12 cup muffin pans with nonstick cooking spray. Gently press one Wonton Wrapper into each muffin cup as you see here.

5. Bake the Wonton Wrappers in the preheated oven for 6-8 minutes. They should be a light golden brown color when done. Transfer them to a cooling rack and cool completely.

6. While the Wonton Wrappers are cooling make the filling. In a medium size mixing bowl beat together the Cream Cheese and Powdered Sugar using a hand mixer. Next add in 1 Cup of the Whipped Cream and mix until smooth. Cover with plastic wrap and place the bowl in the refrigerator until ready to use.

7. Place the Lemon Pudding Mix and 1 & 1/2 Cups Milk into a medium size mixing bowl. Using a hand held mixer beat until Pudding starts to thicken then cover and place in refrigerator for 5 minutes.

8. Time to fill the Wontons. Place about 1 cup of the Cream Cheese mixture into the corner of a sandwich style plastic bag. Twist to remove any air and snip the corner tip of the bag. This works just like a pastry bag to fill the Wonton cups. This is just the first layer so pipe about 1 Tablespoon into each cup and try to get into the corners. Refill the bag and continue piping until all the Wonton Cups are filled.

9. The second layer will be the Lemon Filling. Place about 1 cup of the Lemon Filling into the corner of a sandwich style plastic bag. Twist to remove any air and snip the corner tip of the bag. This works just like a pastry bag to add the second layer into the Wonton Cups. Pipe a layer of Lemon Filling on top of the Cream Cheese Layer using about 1 Tablespoon of filling per Wonton Cup. Refill the bag and continue piping until all the Wonton Cups are filled.

10. The last Layer will be a dollop of Whipped Cream on top. Using a spoon, drop about 1 Tablespoon of the Whipped Cream on top of the Lemon Layer and then sprinkle each dollop with a pinch of the Pecan Pieces.

Serve immediately or store in refrigerator until ready to serve.
