Grilled Cheeseburger in Paradise Soup

A hearty Soup that tastes just like a Cheeseburger.

Most everyone loves a good Cheeseburger, why not turn that flavor combo into a Soup? This would be great to make with leftover Burgers or just throw a few extra on the grill so you can make this Soup later in the week.

I must admit when I was grilling the Burgers for this Soup I wanted to eat them right on the spot then I thought to myself, these Burgers smell so good why am I turning them into a Soup? Well, this Soup has all the great flavor from the Burgers and when combined with the other ingredients, it is just paradise in a bowl!

Butter and grill a few Hamburger Buns to serve on the side. Nothing like a good toasty Bun with Soup.

GRILLED CHEESEBURGER IN PARADISE SOUP

Ingredients:

  • 4 Beef Patties (about 1 & 1/2 pounds total)
  • 1 Cup Yellow Onion, diced
  • 1 Cup Dill Pickles, diced
  • 4 Cups Frozen Cubed Hash Browns
  • 3 – 4 Cups Unsalted Beef Broth
  • 2 Tablespoons Montreal Steak Seasoning
  • 1 Cup Heavy Cream
  • 1/2 Cup Sour Cream
  • 8 Ounces American Cheese, cubed
  • 2 Cups Cheddar Cheese, shredded
  • 1/2 Teaspoon Olive Oil

Directions:

1. First you have to grill the Burgers. I used seasoned Burger patties for this recipe.If your Burgers are not seasoned, sprinkle a bit of Montreal Steak Seasoning evenly over the Burgers prior to grilling. The Burgers should be grilled to medium rare because the meat will still continue to cook in the Soup. I grilled mine for about 4 minutes per side.

2. In a large sauce pan or dutch oven, saute the Onions in a drizzle of Olive Oil just until slightly translucent over medium heat.

3. Now add 3 Cups of the Beef Broth to the pan covering the Onions. Stir in 2 Tablespoons Montreal Steak Seasoning.

4. Crumble the Burgers into bite size pieces and add to the Broth. Bring the Broth to a boil, stir in the Hash Brown Potatoes, then reduce heat to low.

5. Stir in the Heavy Cream, American Cheese and the Cheddar Cheese. Continue to cook and stir until the Cheese melts, Then stir in the Sour Cream and the Pickles.

6. Simmer the Soup for about 10 additional minutes ensuring all the Cheese is melted and the flavors marry. If your Soup looks too thick, you can add in 1 additional Cup of Beef Broth. Remember this is a thick and hearty Soup but depending on the fat content of your Burgers, you may need to add a bit more Broth.

I like to butter and grill Hamburger Buns to serve on the side with this Soup. You can do that when you are grilling the Burgers.
