GOLDEN ALMOND TRUFFLES
Ingredients:
- 1 (13.29 oz.) Bag Golden Oreos Cookies
- 1 (8 oz.) package Cream Cheese, softened
- 1 Teaspoon Almond Extract
- 1 Cup sliced Almonds
- 1 (20 oz.) package Almond Bark
Directions:
1. Line two half size sheet pans with parchment paper and set aside.
2. Transfer the entire package of Cookies into a plastic bag and seal tightly. Grab a rolling pin and crush the Cookies up finely.
3. Add the Almonds into a tightly sealed bag and crush them with a rolling pin.
4. In a large bowl, cream together the Almond Extract and Cream Cheese using a handheld mixer.
5. Add 1/2 Cup of the crushed Almonds and the crushed Cookies into the bowl with the Cream Cheese. Mix until the Cream Cheese is thoroughly combined with the Almonds and Cookies.
6. Use a 1.5 Tablespoon Cookie Scoop to scoop out the Dough. Roll the Dough into round balls and place them on the prepared pans. You should get 30 balls. Place 15 on each pan as you see here, and then place the pans in the freezer.
7. Transfer the remaining 1/2 Cup of Crushed Almonds in a small bowl.
8. Melt the Almond Bark on the stovetop according to package directions.
9. Remove the sheet pans from the freezer and set them close to the melted Almond Bark. Have the bowl of crushed Almonds close by. Begin dipping the balls into the melted Almond bark one at a time. I balance the chilled Ball on a fork, dip the Cookie Dough Ball into the melted Almond Bark, then tap off the excess then place the coated Ball back onto the lined sheet pan and immediately sprinkle a pinch of the crushed Almonds on top. Continue until all 30 Balls are dipped in the melted Almond Bark and topped with the crushed Almonds.
10. Place the sheet pans back in the freezer for about 10 minutes to set the Almond Bark.
11. After 10 minutes remove the sheet pans from the freezer and put the Truffles on a serving tray if you plan to serve them right away, or store them in a covered container in your refrigerator until you are ready to serve them.
