Crustless Spinach Bacon Quiche

Quiche for breakfast, brunch or dinner.

This Quiche recipe is so delicious. I skip the crust for this recipe and use frozen Spinach which means it is quick and easy to prepare. Trust me no one even notices that it is crustless. I rarely have leftovers when I make this.

CRUSTLESS SPINACH BACON QUICHE

  • 1 (10 oz.) Package Frozen Chopped Spinach, thawed
  • 7 Slices Applewood Smoked Bacon, cooked and diced
  • 1/2 Cup Green Onion, diced
  • 1 Cup Fresh Mushrooms, diced
  • 6 Ounces Swiss Cheese, shredded
  • 6 Large Organic Eggs
  • 1/2 Cup Heavy Whipping Cream
  • 1 (4 oz.) Jar Diced Pimentos, drained
  • Freshly Ground Black Pepper

Directions:

1. Preheat oven to 350 degrees.

2. Squeeze out any excess water from the Frozen Spinach. Set aside.

3. Spray a 9 inch, oven safe, pie plate with cooking spray. Set aside.

4. In a large bowl, whisk together the Eggs and Heavy Whipping Cream just until combined.

5. Fold in the Swiss Cheese, Bacon, Mushrooms, Spinach, Pimentos and Green Onion.

6. Give your Pepper Mill a few good turns over the Egg mixture and fold it in.

7. Pour the Egg mixture into the prepared pie plate and spread it out evenly.

8. Bake the Quiche in the preheated oven for 25-30 minutes. The edges will be golden in color and the center will be set. To test for doneness insert a knife in the center and if it comes out clean, the Quiche is done.

9. Let the Quiche rest for 5 minutes before slicing.
