Caramel Apple Bread Pudding

All the flavors of the Autumn harvest.

This is a perfect Autumn Dessert. Pick your Apples up at the Orchard, then create this fabulous Dessert to showcase the Apples in. Bread Pudding is a traditional Dessert and it definitely falls in the comfort food category.

CARAMEL APPLE BREAD PUDDING

Ingredients:

  • 4 Cups Apples, peeled, cored and diced (I used Gala)
  • 1 Loaf Bakery French Bread, cubed (10 cups)
  • 1 (11 oz.) Bag Caramels
  • 5 Large Eggs
  • 1 (12 oz.) Can Evaporated Milk
  • 1 (14 oz.) Can Sweetened Condensed Milk
  • 4 Tablespoons Unsalted Butter
  • 2 Tablespoons Heavy Cream
  • 1/2 Tablespoon Vanilla Extract
  • 1/8 Teaspoon Nutmeg
  • 1/8 Teaspoon Cloves
  • 1 Tablespoon Cinnamon

Directions:

1. Preheat oven to 350 Degrees.

2. Spray an 8 x 11.5 (2 quart) baking dish with nonstick cooking spray. Set aside.

3. In a large saute pan, add 2 Tablespoons Butter and the Apples. Saute over medium/low heat just until tender. Set aside to cool slightly.

4. In a large mixing bowl, whisk together the Sweetened Condensed Milk, Evaporated Milk, Eggs, Vanilla, Cinnamon, Nutmeg and Cloves. Fold in the Bread Cubes and let all the liquid absorb into the Bread Cubes, then fold in the Apples.

5. Transfer the Bread Pudding mixture into the prepared baking dish. Then dot the top with the remaining 2 Tablespoons Butter as you see here.

6. Bake the Bread Pudding for 1 hour. Insert a Knife in center of the Bread Pudding, if it comes out clean, the Bread Pudding is done, if not, bake an additional 8-10 minutes.

7. Remove the Bread Pudding from the oven when it is done and allow it to cool slightly. Unwrap the Caramels and place them in a microwave safe bowl with 2 Tablespoons Heavy Cream. Microwave them in 30 second intervals, stirring in between intervals until the Caramels are melted and smooth.

8. Pour the Melted Caramel mixture evenly over the top of the Bread Pudding.

9. Serve this with a dollop of whipped cream or a scoop of vanilla ice cream.
