Captain Lime Shrimp

Delicious grilled Shrimp.

This Shrimp is a perfect appetizer. The Captain Morgan Spiced Rum adds a hint of earthiness with its warming spices and hint of oak. Then the citrus from the Lime and a little kick from the Chili Oil rounds this dish out to be perfectly flavored. This recipe will give you another flavor option for your grilled Shrimp. It is delicious and whenever I make it, the serving platter returns empty. Our guests always wonder what the secret ingredients are. Now you have my recipe!

CAPTAIN LIME SHRIMP

Ingredients:

  • 1 Pound Raw Peeled Deveined Shrimp (16/20 size)
  • 1/4 Cup Captain Morgan Spiced Rum
  • 1/4 Cup Freshly Squeezed Lime Juice
  • 1/4 Cup Low Sodium Soy Sauce
  • 1/4 Cup Chili Sauce
  • 1/4 Cup Extra Virgin Olive Oil
  • 1 Tablespoon Chili Oil
  • 1 Tablespoon Minced Garlic
  • 1/4 Cup Green Onion, diced

Directions:

1. Soak eight (10″) wooden skewers in water. You won’t use all the skewers, but I always soak a few extra in case one breaks or splits. Set aside until ready to grill.

2. Add the Rum, Lime Juice, Soy Sauce, Chili Sauce, Olive Oil, Chili Oil and Garlic into a blender. Blend until all ingredients come together and are smooth. This should create about 10 ounces of Captain Lime Marinade/Sauce.

3. Place the Shrimp in a resealable bag and add about 5 Ounces of the Captain Lime Marinade into the bag. Refrigerate the Shrimp for 1 hour to marinate the Shrimp. Put the remaining Captain Lime Sauce in a glass jar with a lid and place in the refrigerator.

4. After 1 hour, preheat a gas grill to medium. While the grill is preheating, remove the Shrimp from the bag and place 4 Shrimp on each skewer. You should be able to make 5 skewers of Shrimp. Remove the Jar of Sauce from the refrigerator as well, and give it a good shake.

5. Once the Grill is up to temp, place the Shrimp skewers on the grill. Cook the Shrimp skewers for about 3 minutes per side, brushing the Shrimp with the extra Captain Lime Sauce. The Shrimp are done when they are opaque and slightly pink in color. They cook quickly so stand by the grill and watch them closely.

6. When the Shrimp are done, remove the skewers from the grill and sprinkle the Green Onion over the top of the Shrimp. The Green Onion will cling to the Captain Lime Sauce and add a nice finishing touch.

7. Serve the Shrimp skewers with extra wedges of Lime to squeeze over the top.
