Butterscotch Haystacks

A classic treat.

There are many different Haystack recipes out there. This is my version. Easy to make, full of flavor for a dessert or snack. A perfect little no bake treat.

BUTTERSCOTCH HAYSTACKS

Ingredients:

  • 1 (11 oz.) package Butterscotch Chips
  • 1 (6 oz.) package Chow Mein Noodles
  • 1 Cup Lightly Salted Peanuts
  • 2 Tablespoons Creamy Peanut Butter
  • 1 (4 oz.) Premium White Chocolate Baking Bar

Directions:

1. In a large bowl, add in the Peanuts and Chow Mein Noodles. Set aside.

2. Line a baking sheet with parchment paper and set aside.

3. Place the Butterscotch Chips in a double boiler. Begin to melt the Butterscotch Chips. When the Butterscotch Chips are close to being all melted, stir in the Peanut Butter. Continue to stir until the Chips are completely melted and everything comes together and is smooth.

4. Remove the top from the double boiler and place it on a kitchen towel and dry off the bottom and sides quickly. You don’t want any water from the steam to get in the Butterscotch mixture or it could compromise it.

5. Quickly pour the Butterscotch mixture over the Peanuts and Chow Mein Noodles. Use a rubber spatula to fold everything together gently. Try to get everything coated with the Butterscotch mixture.

6. Drop the Chow Mein Noodle mixture by heaping tablespoon on to the parchment lined pan. You should get 24 haystacks.

7. Place the baking sheet in the freezer for 40 minutes.

8. Just prior to removing the Haystacks from the freezer, start melting the White Chocolate Bar. I melt mine by using a mini crockpot. It works great! You can use any method you choose to melt the White Chocolate or follow melting instructions on the package.

9. Remove the Haystacks from the freezer and drizzle the melted White Chocolate over each Haystack. I just use a spoon and dip it into the Chocolate then make back and forth motions across each Haystack.

10. Place the tray with the Haystacks on back in the freezer for 20-30 minutes just to firm up the Chocolate.

11. Store the Haystacks in a tightly covered container.
