Buffalo Chicken Hash Brown Casserole

Make this hearty Casserole for game day or Sunday brunch.

I wanted to come up with a new recipe for the big game. I wanted to incorporate Potatoes and something spicy. Buffalo Sauce and Chicken came to mind so I put them all in this hearty Casserole. The Buffalo Sauce gives it a little extra kick! Perfect for game day!

BUFFALO CHICKEN HASH BROWN CASSEROLE

  • 4 Cups Cooked Pulled Chicken
  • 2 Cups Celery, diced
  • 1 Small Red Onion, diced
  • 1 Cup Shredded Carrots
  • 1 Cup Buffalo Wing Sauce
  • 1 (32 oz.) Package Frozen Cubed Hash Brown Potatoes, partially thawed
  • 2 Cups Shredded Marble Jack Cheese
  • 1 (10.5 oz.) Can Cream of Chicken Soup
  • 1 Cup Ranch Dressing
  • 1 Tablespoon Butter
  • 3/4 Cup Green Onion, diced
  • Freshly Ground Black Pepper

Directions:

1. Preheat oven to 375 degrees.

2. Place the Chicken into a large bowl and add the Buffalo Wing Sauce and stir until all the Chicken is coated with the Buffalo Sauce. Set aside.

3. In a medium size frying pan, cook the Celery, Carrots and Red Onion in the Butter over low heat until tender. Remove pan from the heat.

4. In a large bowl, whisk together the Cream of Chicken Soup and the Ranch Dressing. Add the cooked Veggies and the Hash Browns to the bowl. Give your pepper mill a few good turns over all in the bowl. Fold everything together to combine all the ingredients.

5. Spray a 13 x 9 Baking dish with non stick cooking spray. Spread the Hash Brown mixture evenly in the bottom of the pan.

6. Now evenly spread the Buffalo Chicken mixture over the Potatoes.

7. Cover the Casserole with foil and bake in the preheated oven for 35-45 minutes. All ovens cook differently so check the Casserole at 30 minutes. The mixture should be heated all the way through and be hot and bubbly. This Casserole took 45 minutes in my oven.

8. Once the Casserole is hot and bubbly, remove the Casserole from the oven. Remove the foil and sprinkle the Cheese evenly on the top then sprinkle the Green Onions on top of the Cheese. Bake an additional 10-15 minutes uncovered, until the Cheese is completely melted on top.

9. Let the Casserole cool for 3-5 minutes before serving.

Serve with Blue Cheese Dressing and also Ranch Dressing on the side. Let your guests drizzle it over the top of their serving.
