Bow Tie Pasta with Chicken and Sun Dried Tomatoes

A creamy Pasta with Chicken and Sun Dried Tomatoes.

The earthiness of the Sun Dried Tomatoes and Bacon really add to the flavor of this Pasta. When creating this recipe I struggled to get the Cream Sauce just the way I wanted it. Ultimately, I found that a basic Cream Sauce worked best in this dish to allow the other ingredients to be more forward. A sprinkle of Parmesan to top it all off and this Pasta is ready to serve your family.

Bow Tie Pasta with Chicken and Sun Dried Tomatoes

Ingredients:

  • 12 Ounce Bow Tie Pasta
  • 3 Cups Cooked Chicken, cut into bite size pieces
  • 5 Slices Applewood Smoked Bacon
  • 3 Ounces Sun Dried Tomatoes, julienne cut
  • 8 Ounces Fresh Spinach
  • 2 Cloves Garlic, minced
  • 1 Cup Shredded Parmesan Cheese, plus extra to garnish
  • 1 Stick Unsalted Butter
  • 1 Pint Heavy Whipping Cream
  • 2 Tablespoons Freshly Ground Black Pepper

Directions:
1. Cook the Bacon in a large skillet. When the Bacon is done transfer it to a paper towel to drain, then cut into bite size pieces and set aside. Leave 2-3 Tablespoons of the Bacon fat in the skillet and set aside.

2. In a medium saucepan, add the Butter and melt over low heat. Whisk the Heavy Cream into the Butter and increase the heat to medium and whisk until it begins to bubble. Whisk in 1 Cup Parmesan Cheese and 1 Tablespoon Pepper. Reduce heat to low and stir and whisk just until the sauce thickens slightly. Turn off the heat source and set aside.

3. Begin the process of cooking the Pasta al dente. While you are waiting for the Pasta to cook, add the Sun Dried Tomatoes and Garlic to the skillet with the Bacon drippings. Saute over medium heat just until the Garlic is tender. Add the entire bag of Spinach into the skillet reduce the heat to low and cover the pan. It will seem like there is too much Spinach, but trust me, it will wilt down and be just the right amount for this dish. As the Spinach wilts, give it a good stir during the process.

4. When the Pasta is done, drain it and add it to the skillet with the Spinach, then add the Bacon, 1 Tablespoon Pepper, Chicken and the Cream Sauce into the skillet. Over medium/low heat stir everything so all ingredients are coated with the Cream Sauce. Continue to cook just until everything is heated through.

5. Plate the Pasta and sprinkle a bit more Parmesan Cheese on top and you are ready to serve!
