Berry Cheesecake Fruit Salad

A creamy delicious Fruit Salad.

This Fruit Salad has the flavors of Cheesecake and the fresh Berries burst with flavor. A little toasted Coconut adds another flavor dimension to round out this delicious Fruit Salad.

BERRY CHEESECAKE FRUIT SALAD

Ingredients:

  • 2 (8 oz.) Cream Cheese, softened
  • 1 Pound Fresh Strawberries, stems removed
  • 1 Pound Fresh Blackberries
  • 1/2 Tablespoon Vanilla Extract
  • 1 Cup Heavy Whipping Cream
  • 1/2 Cup Sugar
  • 1 Cup Flaked Coconut, toasted (directions below)

Directions:

1. To toast the Coconut, preheat oven to 325 degrees. Sprinkle the Coconut on a rimmed baking pan. Place in the preheated oven and watch carefully. Coconut can burn vey easily so don’t stray from the oven, keep a close watch and stir often. It only takes a few minutes to toast the Coconut. As soon as you see it turn a light golden color, remove the pan from the oven and stir the Coconut again, then allow it to cool.

2. Rinse the Berries. Make sure all stems are removed. For the Strawberries, cut them in half or quarter them, depending on their size. If your Blackberries are large, cut them in half. Set aside.

3. In a large mixing bowl, beat the Cream Cheese, Sugar, Heavy Whipping Cream and Vanilla with a handheld mixer, until smooth.

4. Fold in the Berries very gently, then fold in the Toasted Coconut.

5. Put the Berry Cheesecake Fruit Salad in a covered container and refrigerate for 2-3 hours to chill, prior to serving.

6. Store any leftovers in a covered container in the refrigerator. It will keep for 3 days.
