Watermelon Cucumber Salad

A flavorful Summer Salad.

This Salad has the sweetness from Watermelon, slight crunch from Cucumber, a little salty creaminess from the Feta Cheese, then the Cilantro and Red Onion add a little Zing, with the Lime balancing the whole thing out. This Salad is perfect for a light Summer lunch on the patio or prepare it as a side to go with grilled chicken or fish. Make a double batch if you want to bring this to a summer potluck.

WATERMELON CUCUMBER SALAD

Ingredients:

  • 4 Cups Watermelon, cut into bite size pieces
  • 1 Medium Cucumber, (about 2 cups) peeled and cut into bite size pieces
  • 1  (6 oz.) Container Crumbled Feta Cheese
  • Handful of Cilantro, roughly chopped
  • 3/4 Cup Red Onion, thinly sliced
  • 1/4 Cup Extra Virgin Olive Oil
  • Juice and Zest from 2 Limes

Directions:

1. Place all the Salad ingredients except the Olive Oil and Lime, in a large salad bowl.

2. Zest the Limes over the top of the Salad ingredients in the bowl. Squeeze the Lime Juice into the bowl, then drizzle the Olive Oil over the Salad ingredients.

3. Carefully fold the Salad together ensuring everything is coated with the Olive Oil and Lime Juice.

4. Serve this Salad family style straight from the Salad bowl or get out your pretty summer salad plates to serve your guests. This Salad is best, served on the day you make it, because Watermelon has a high water content.
