There are so many different Recipes for Manicotti. Some stuffed with Chicken, Ricotta, Italian Sausage and more. This one is stuffed with Seafood, Spinach and Ricotta.

Then there are so many sauce options! Some use Tomato Basil, or a Béchamel sauce.


Sloppy Joes

Good old Sloppy Joes!

I probably have made 100’s of versions of the good old Sloppy Joe. Sometimes using whatever was in the pantry or refrigerator at the time or even making a somewhat gourmet Sloppy Joe.

Sloppy Joes are served in Church basements for functions, school cafeterias and at many gatherings.


Beef Merlot Over Sour Cream Mashed Potatoes


Getting moist tender Beef can be tricky. The key to cooking it is “low and slow”!

In this dish, the flavor of Merlot really enhances the Beef and creates a great base note for our Tomato Sauce. if you have any leftover Wine from the evening before, this is a good way to use it, since Wine usually only keeps for 3 days.


Apple Baked Ham

This recipe will make your Ham tender, juicy and full of flavor. 

Baking your Ham with Apples and Cloves enhances the flavor.

I am definitely a proponent of baking Ham cut side down. It truly does help retain the moisture. Remember this type of Ham is already cooked.
